In Profiler itself is Help -> DVD Profiler Help.  Then you've got the "Support" link at the very top of this screen.  And if all else fails you have us here in the forums.

I think the best way to learn is to just dive in and experiment.  If you're worried about messing something up, then I suggest you start your education with the Backup option found under the File menu.  In fact, start there anyway.
Get the CSVExport and Database Query plug-ins here.
Create fake parent profiles to organize your collection.

you can also use a copy of the database - if you go to File / Open then there is the option to create a new database as a exact copy of the current one. Use that to play around with and then go back to your original database.
(make sure you have opened your temp copy!)

And a backup is useful anyway..
