Consider sets like the Alien Quadrilogy or Back to the Future, in which the individual discs [hence movies] are combined without their own covers. Is it correct to include scans of the discs in those cases? Or should the box set covers be used [as is done with Complete Black Adder], or should there be no images being submitted?

From the rules:

Cover Images. If a film is individually packaged, use the cover images from that packaging.

As they are not individually packaged the outer cover image should  be used.
